The alarm rang at a quarter past three, and Grigor almost threw his phone across the room. It was his first summer job. He had already decided that nobody should be awake at this hour. His mother had left toast on the table. He ate it standing up, still half asleep, and cycled through the empty streets.
O despertador tocou às três e quinze, e Grigor quase jogou o celular do outro lado do quarto. Era o primeiro emprego de verão dele. Ele já tinha decidido que ninguém deveria estar acordado àquela hora. A mãe tinha deixado torradas na mesa. Ele as comeu em pé, ainda meio dormindo, e saiu de bicicleta pelas ruas vazias.
The bakery smelled of warm butter and yeast. The lights were on in the back. The head baker was a tall woman with flour up to her elbows. She looked at him once and said, "Wash your hands. Apron is on the hook." Then she turned back to her dough. That was the whole welcome.
A padaria cheirava a manteiga quente e fermento. As luzes dos fundos estavam acesas. A chefe dos padeiros era uma mulher alta, com farinha até os cotovelos. Ela olhou para ele uma vez e disse: "Lave as mãos. O avental está no gancho." Depois voltou para a massa. Essa foi toda a recepção.
The first week went badly. On Monday, Grigor forgot to set the timer and burned a whole tray of rolls. They came out of the oven as black as coal. On Wednesday, he dropped a bag of flour. A white cloud covered the floor, the shelves and one very surprised radio. The head baker said nothing. She just handed him a broom.
A primeira semana foi péssima. Na segunda-feira, Grigor esqueceu de ligar o timer e queimou uma bandeja inteira de pãezinhos. Saíram do forno pretos como carvão. Na quarta, deixou cair um saco de farinha. Uma nuvem branca cobriu o chão, as prateleiras e um rádio muito surpreso. A chefe não disse nada. Só lhe entregou uma vassoura.
He was sure she wanted to fire him. The other bakers talked and joked while they worked, but she hardly spoke at all. When she did, it was short: "Colder water." "Fold, don't push." "Again." Grigor kept thinking that he might quit by Friday if nothing improved.
Ele tinha certeza de que ela queria demiti-lo. Os outros padeiros conversavam e faziam piadas enquanto trabalhavam, mas ela mal falava. Quando falava, era curto: "Água mais fria." "Dobre, não empurre." "De novo." Grigor não parava de pensar que talvez desistisse na sexta se nada melhorasse.
Still, he came back every morning. He cleaned the tables before anyone asked him to. He watched her hands. She turned the dough a quarter turn and pressed it with the heel of her palm. At home, he practiced with bread dough in the kitchen, and his little sister ate the mistakes.
Mesmo assim, ele voltava todas as manhãs. Limpava as mesas antes que alguém pedisse. Observava as mãos dela. Ela girava a massa um quarto de volta e a pressionava com a base da palma. Em casa, ele treinava com massa de pão na cozinha, e a irmãzinha comia os erros.
On Friday, the bakers were busy with a big order for a wedding. The head baker pointed at a huge bowl of dough and then at the long table. "You," she said. "Shape these. Alone."
Na sexta-feira, os padeiros estavam ocupados com uma grande encomenda para um casamento. A chefe apontou para uma tigela enorme de massa e depois para a mesa comprida. "Você", disse ela. "Modele estes. Sozinho."
Grigor's stomach dropped. "All of them? There must be forty loaves."
O estômago de Grigor despencou. "Todos? Deve ter quarenta pães."
"Forty loaves," she said, and she walked away.
"Quarenta pães", disse ela, e foi embora.
He worked for an hour without looking up. His loaves were not perfect, but they were round, tight and even. When he finished, the head baker walked slowly along the table and checked each one. At the end, she picked up the last loaf, turned it over in her hands, and nodded once.
Ele trabalhou por uma hora sem levantar os olhos. Os pães não estavam perfeitos, mas eram redondos, firmes e uniformes. Quando terminou, a chefe caminhou devagar ao longo da mesa e examinou cada um. No fim, pegou o último pão, virou-o nas mãos e acenou com a cabeça uma única vez.
"Same time on Monday," she said. Then she gave him a small piece of warm bread from the first tray. "Eat. You have earned it."
"Mesmo horário na segunda", disse ela. Depois lhe deu um pedacinho de pão quente da primeira fornada. "Coma. Você mereceu."
